Hello friends! Taking advantage of all of the summer produce and the longer days while we have them. This is just the beginning of our summer menu and will continually be added over this next season. Happy cooking!



Breakfast:
Matcha Lemon Poppyseed Muffins
Lemon Blueberry Breakfast Bars (v) - the berries are only getting better; these bars are here to stay
Hard-/Soft-boiled eggs on avocado toast
Viral Frozen Peach + Greek Yogurt
Strawberries n Cream Smoothie
— With the weather warming up, smoothies are coming back into the rotation
— Ingredients: Protein powder (1 serving size or 20-30g), 1 tbsp hemp seeds, greens, 1 cup frozen strawberries, and 1/2 kefir/yogurt, ice, milk of choice (add milk as needed and depending on thickness preference).
— Instructions: Add it all into a blender and blend away! Top with your favorite granola and/or TJ’s dried strawberries

Shakshuka - the most appropriate when the tomatoes and peppers are at their best!
Almond Butter Chocolate Chip Zucchini Bars
Lunch:
Leftovers [will always be queen of lunch in our hearts]
— This is one example but I think wraps are a great way to pack in lots of nutrients and have the same convenience level as a sandwich! A sandwich remix, if you will.
Adult Lunchable - protein of choice, cracker, fruit, veg, dip (hummus, tzatziki, ranch, etc.)
Caprese Pesto Tart - honestly you could pivot through a couple different cheeses on this; ricotta, burrata, mozzarella, dare I say goat cheese, etc.
Dinner:
Ceviche - you can swap a ton of different fish for this light, cold, delicious dinner
Summer Carbonara; when I say this is one of my favorite meals, I mean it is one of my favorite meals (underlined, bold, italicized, all the exclamation points)
Herby Labneh w/ Blistered Snap Peas
Coleslaw (v)
Ina Garten’s Summer Garden Pasta
Taco Salad - ground turkey/beef, beans, corn, bell pepper, jalepeño, crushed tortilla chips, avocado slices, + Primal Kitchen’s Cilantro Lime Dressing
Mediterranean Meatballs w/ Homemade Tzatziki
Beet + Stone Fruit Salad; used nectarines and apricots because summer and added couscous for more texture
Tabbouleh (v); I usually make it with quinoa instead, but you can make this with a variety of grains!
Shishito Pepper Salad w/ Sizzled Mint + Sesame



Dessert:
S’mores
Ice Cream
Grilled stone fruit with ice cream
No Bake Mixed Berry Custard Tart
Drinks:
Aperol Spritz
Strawberry Mint Mojito Mocktail
