


Ingredients:
— Base:
1.5 cups oat flour
1.25 cups oats
1/3 cup coconut oil, melted
1/4 cup maple syrup
1 heaping tbsp matcha
1/2 tsp vanilla extract
1/4 tsp salt
1/2 cup dried strawberries, chopped, for topping post-bake!
— Strawberry Jam
~2 cups strawberries, chopped
3 tbsp maple syrup
2 tbsp chia seeds
Instructions:
Preheat oven to 350. Line an 8x8 or 9x9 baking pan with parchment paper. In a bowl, mix all base ingredients together until a dough-like consistency is created. Put 1.75 cup of the dough/base mixture into the lined pan and spread thin to create a base. Put in the fridge to harden while you make your jam!
In a small saucepan, add all strawberry jam ingredients and cook on medium heat. Stir until the mixture starts to slightly thicken (~4-5 minutes). Pour this jam onto the base, then crumbling the remaining dough on top. Bake for 30-35 minutes! Once it’s out of the oven and cooled down some, I chopped up Trader Joe’s dried strawberries and sprinkled on top for more crunch/berry goodness. Enjoy for breakfast or anytime of the day!
