Hello friends! A sneak peek of what is to come in the April newsletter, but with the great weather coming our way this weekend, I thought we deserved a little treat early. Happy cooking!


Breakfast:
Lemon Blueberry Breakfast Bars (v)
— I have made these with different berries and they are always delicious; I usually pair with greek yogurt to help blood sugar balance and increase protein.
PB&J Smoothie
— With the weather warming up, smoothies are coming back into the rotation
— Ingredients: Protein powder (1 serving size or 20-30g), 1 tablespoon peanut butter, 1 tbsp chia seeds, greens, 1/2 cup frozen strawberries, and 1/2-1 cup almond milk (add milk as needed and depending on thickness preference).
— Instructions: Add it all into a blender and blend away!
Toast
— avocado, soft-boiled eggs, fresh herbs, pickled onions
— avocado, cottage cheese (don’t knock until you try!), fresh herbs, and balsamic
— cottage cheese, handful of berries, honey (optional)
— cottage cheese, pb, cinnamon
(guys, listen, I’m not not on the cottage cheese train okay?? don’t hate me cuz you ain’t me)
Overnight Oats
— can eat cold on a warmer day or cook on the stovetop for extra thick [read: thiq] oatmeal
— Ingredients: 1/2 cup oats, 2 tbsp chia seeds, 1 scoop of protein powder (can sub collagen), 1/4 cup plain kefir (can sub df yogurt), 1 cup coconut milk (can sub other milk), cinnamon, and a dash of salt
— Instructions: add ingredients into a glass container or mason jar, stir or shake, then store in the fridge overnight.
— Topping ideas: lemon curd, maple syrup, lemon zest, hemp seeds, nut butter, tahini, berries, apple, chocolate chips (@ Todd)
— let’s be honest, this is prime breakfast or snack material. Or dessert, depending on what you pair it with.
— if going hard in the paint for breakfast with this one (which I encourage), pair it with cottage cheese or greek yogurt to help blood sugar balance, increase protein, and improve satiety!
Lunch:
Leftover Salads
— any leftovers from the night before + greens + a favorite dressing
Adult Lunchable, aka a charcuterie board:
— meats: grilled chicken sausages, turkey, or prosciutto
— cheese: have a deep obsession with unexpected cheddar from Trader Joe’s, but also love goat cheese, sharp cheddar,
— crackers: love anything Simple Mills, Mary’s Crackers, or fun ones from Trader Joe’s!
— veggies: pickled onions, radishes, grilled mushrooms or asparagus,
— fruit: dried or fresh fruit
— nuts: Trader Joe’s has rosemary almonds that are to die for, garlic cashews, pistachios, roasted or raw nuts

Tuna with crackers, in a salad, or on toast
— My repeat recipe: olive oil, lemon, capers, salt, pepper, and a little bit of dijon. Lemon zest on top if we’re feeling fancy. You’re welcome.
— Todd’s favorite way: Cholula, greek yogurt, olive oil, cayenne, salt, pepper
Dinner:
Marinated Butter Beans, Ricotta, + Charred Artichoke Hearts with Fresh Herbs
— my God I wish I came up with this recipe; I paired this delicious side with grilled chicken and fresh sourdough bread and it was, as Mama West says, ‘lick the plate’ good
— I’m ruined. I can’t eat nachos anywhere else now.
Lemon Herb Couscous Salad with Cucumber and Radishes
Veggie Sausage White Bean Skillet with Kale & Sun-Dried Tomatoes
Artichoke Pesto and Burrata Pizza with Lemony Arugula
Roasted Asparagus + Radishes with Mustard Vinaigrette
Spring Hot Honey Halloumi Bowl
Arugula Orzo with Feta, Lemon & Mint
Lemon Pepper Pasta with Browned Butter
