


Ingredients:
1 cup oat flour*
1 cup pear, chopped (~1-2 pears)
1/2 cup buckwheat flour*
1/2 cup oats
1/2 cup protein powder
1/2 cup coconut sugar
2 tsp cinnamon
1 tsp baking soda
1/2 tsp ginger
1/4 tsp salt
3/4 cup kefir (just a smidge over)
1/4 cup olive oil
1 lemon, juiced
2 eggs
1 tsp vanilla extract
Instructions:
Preheat oven to 350. Add chopped pear, lemon juice, and 1 tbsp coconut sugar to a lined parchment and mix. Roast for 30 minutes or until pear has some color and skin will begin to curl.
Whisk wet ingredients together in a bowl. Add dry ingredients to that bowl and mix. Lastly, fold in the pear. Add to a lined muffin pan and bake for 17 minutes or until a toothpick comes out clean.
Sub options:
— Can sub flours for ones you have on hand; kefir/yogurt may have to be adjusted
— Can sub flour instead of protein powder; kefir/yogurt may have to be adjusted
— Can sub coconut yogurt or Greek yogurt instead of kefir
— 1/2 cup almond milk instead of eggs
*If you’re using different flours and it feels dry, add a tbsp of kefir/yogurt at a time! Cooking time may vary with different flours, so keep an eye on them!
