

Ingredients:
— Meatballs:
1 lb. ground turkey, chicken, lamb, or beef
1/4 cup red onion, chopped
1/4 cup feta
2-4 garlic cloves, minced (depending on preference)
1 egg
2 tsp. dried oregano (or 2 tbsp fresh oregano)
1 tsp. dried dill (or 1 tablespoon fresh dill)
1/2 tsp cumin
s + p, couple dashes of both
— Tzatziki:
1 cup greek yogurt
2 persian cucumber or 1/2 english cucumber
2 tbsp fresh dill (or 2 tsp of dried dill)
2 garlic, minced
1/2 lemon, juiced
1-2 tbsp olive oil
s + p, to taste
Instructions:
Combine meatball ingredients in a bowl and mix. Make meatballs with hands or use an ice cream scooper and put on a baking sheet (oil the baking sheet or use parchment paper). Bake in the oven at 400, cook on the stovetop over medium heat for 15-20 minutes, or until the meat hits 160-165 (depending on the meat you’re using). While those are cooking, make tzatziki by combining ingredients! You can eat these delicious meatballs with rice, pita bread, or a fun grain like farro. I also added asparagus with herbs, lemon, and olive oil to the oven for a similar time frame to the meatballs and sprinkled everything with extra feta at the end.
Sub Options:
— 1/4 cup capers instead of feta for DF
— 1/2 avocado (or 1/4 cup) instead of 1 egg
*Tip: anytime you sub fresh herbs for dried, it should be 3x the amount for the same strength of flavor!
